100% Sangiovese from the Biodynamic Paxton Vineyards in Mclaren Vale. Picked early to keep freshness it was whole bunch pressed straight to tank where it undertook a slow wild fermentation. They are kept in tank on full lees for 6 months. They are racked twice before being bottled unfined and unfiltered with minimal sulphur.
A darker style of Rosé, bright acidity on the nose, creamy with some spiciness to boot. Blackberries and cherry fruit wrapped up in a blanket of silky texture.
