Description
Nichon is predominantly Semillon, from 65-year-old dry-grown, own-rooted vines on an organically farmed vineyard nearby to the Rza block, still on the sandy soils of the Vine Vale (the remaining 10% is Sauvignon Blanc). All the fruit was basket-pressed over a slow 12 hour cycle in order to allow the juice to take in some aromatic and structural integrity from the skins, then barrel-fermented in second-use French oak as well as some untoasted Stockinger. The wine remained in oak for a year before being bottled unfined and unfiltered.
