The Sangio was our last pick; we harvested it at the beginning of April. From the beginning, the juice had more tannic character than the other varietal wines, and it was also at some point a touch reductive in the barrel; although that went away before bottling, I still thought it was a good idea to use nomacorc for this wine. The Sangio is the most complex of my wines and could benefit from ageing in a cellar environment. I'd enjoy it with pasta bolognese.
