Les Fruits is the winemaking project of Tim Stock. Using naturally and biodynamically farmed grapes sourced out of the Adelaide Hills and Barossa Valley. Produced in a shed in Basket Range, the winemaking is simple and traditional. All wines are matured on lees in old French oak barrels of varying sizes. Nothing is added except minimal sulphur at racking and/or directly before bottling. Some cuvées have no sulphur additions. All wines are bottled unfined and unfiltered. Gonzo is a blend of Cinsault and Grenache from Vine Vale in the Barossa Valley. The following notes by Tim.
Wanting to replicate the freshness of 2017 we harvested the 2018 as early as possible due to the warmer season, picking just after flavour had appeared. The resulting 10.8% alc/vol wine is a delicate little beauty that drinks like raspberry and pomegranate cordial with trademark rosewater florals and texture. Extreme rating on the smashability index!
