Les Fruits is the winemaking project of Tim Stock. Using naturally and biodynamically farmed grapes sourced out of the Adelaide Hills and Barossa Valley. Produced in a shed in Basket Range, the winemaking is simple and traditional. All wines are matured on lees in old French oak barrels of varying sizes. Nothing is added except minimal sulphur at racking and/or directly before bottling. Some cuvées have no sulphur additions. All wines are bottled unfined and unfiltered. Big Bones is 100% Pinot Gris.
