Organically farmed Sauvignon Blanc from 25 year old dry grown vines, planted in schist soils over sandstone.
A combination between great soils, a super cold site, beautiful slow ripening season and low yields has allowed for a rich and ripe style of Sauvignon to be produced. We reworked the vines to cane pruning two years ago and this is the first crop. Grapes were picked on 03 April, half of the grapes were pressed, the other half destemmed, these were then combined and left on skins for four days before being drained and pressed into 500L French puncheons for a slow primary and malolactic fermentation over winter.
Smokey, flinty, and more akin to the Loire Valley than the Adelaide Hills in style.
