In a former life, Philippe Chevarin was an audio engineer, touring the world with lesser know noise bands and more prominent artists like Vanessa Paradis (look her up, she was engaged to Johnny Depp). In his downtime, he began studying viticulture which eventually led to him purchasing a couple of hectares of land under vine in 2014 which has now increased to 5 hectares. He grows Melon de Bourgogne, Gamay, Grolleau and Cabernet Sauvignon and manages his vines according to organic farming practices. Up to this point he has managed to make all of his wines without the addition of any sulphur; but he is not opposed to it if he feels it will benefit the wines.
The fruit for this wine comes from a few different plots which are all grown in limestone rich soils. Black forest fruits, dried herbs held up by a strong mineral backbone. The fruit and tannin have some length on the palate and this is definitely a wine that goes great with a bit of a chill.
