100% Negroamaro, hand-harvested and destemmed, spontaneous fermentation with 5 days maceration in open vats, manual breaking of the cap, Batonnage 2 times per month. Cold stabilization in stainless steel naturally over winter and racked 4 times before bottling. Unfined and unfiltered, with a small amount of sulfur added at bottling.
Blackberry, black cherry, nice and fresh with a bitter finish and chewy tannin.
