Bombino, hand-harvested and destemmed, spontaneous ferment in stainless steel, no skin contact, no temperature control, batonnage 1-2 times per week. Cold stabilization in stainless steel naturally over winter. Unfined and unfiltered, with a small amount of sulfur added at bottling.
Lemon citrus, grapefruit and a long finish.
