I'm fascinated by the ancient traditions of Georgian winemaking - over 3000 years of history fermenting grapes and making parties happen.
In 2017 we buried two Georgian qvevri (large ceramic amphorae) in the ferrous clay solid of Symphonia vineyards in the King Valley, Victoria, and filled them with gorgeous, red-fleshed Saperavi.
10 months in qvevri gives our Saperavi a brooding intensity like velvet and wonderful length with notes of cassis and blackberries.
