Les Fruits is the winemaking project of Tim Stock. Using naturally and biodynamically farmed grapes sourced out of the Adelaide Hills and Barossa Valley. Produced in a shed in Basket Range, the winemaking is simple and traditional. All wines are matured on lees in old French oak barrels of varying sizes. Nothing is added except minimal sulphur at racking and/or directly before bottling. Some cuvées have no sulphur additions. All wines are bottled unfined and unfiltered. Loiraine is 100% Sauvignon Blanc. The following notes by Tim.
This vintage has taken on a distinct oxidative note. Usual vibrant pale straw colour. Ripe yellow citrus fruits blend with dried cream lees note and some almond nuttiness and minerality. En bouche its got the characteristic lemon/grapefruit acid drive but fruit flavours are heading into the orange citrus direction, probs a combo of the splash of skin and oxidation, bringing out a thirst-quenching dry orange juice finish. The soul of the fruit is strong with the oxy notes adding a delicious complexity.
