Les Fruits is the winemaking project of Tim Stock. He sources all his fruit from naturally and biodynamically farmed sites in the Adelaide Hills and Barossa Valley. Tim LOVES wood so all his wines are matured in old French oak barrels.
Big Bones is a Pinot Gris from Hahndorf in the Adelaide Hills. Melon aromas turn to a more sharp lemon citrus flavour. No sulphur was added at any stage during the making of Big Bones which, according to Tim was a gamble due to the amount of residual sugar but the wine demanded it be left; and it paid off.
