70% Chardonnay, 30% Savagnin from 20-60 year old vines. Grapes pressed as whole bunches with pneumatic press and juice from both grapes is blended straight away to ferment together.
Trademark Touraize nose - this seems a bit more refined and mineral than the 15, even less rich on the nose. Salty citrus spray, light florals and bergamot. Clean and focused, with mild texture – molecular cumquat spray. Refined creamy texture, all lemon and citrus, that finishes with a beautiful oyster shell note. The balance and length is perfection. Seamless and effortless. Finishes with a dash of lemon, honey and barley, and then the marles minerality. A very complete wine, very serious and elegant. The best Les Moulins yet!
