Pat Sullivan and Bill Downie are two of the leading faces of the minimal intervention wine scene in Australia. They have put together a patchwork of parcels in Baw Baw shire in West Gippsland with the aim of making fine wines of terroir in the region, centered around the town of Warragul, which is unique for it’s rich red volcanic soils.
This wine is from the centrepeice of their holdings, Wild Dog, just north of Warragul. Rolling lush hills, high rainfall and red basalt, the Syrah from the property is especially fresh and lively.
It speaks of the cool climate and the volcanic soil in it’s energy, savoury edge and fine structure. This was made with no additions except for a touch of sulphur at bottling. Aged in large old oak which gives a lovely velvety texture.
