Notes from Das Juice:
The 2020 vintage had its obvious challenges the first of which being the loss of our regular prosecco vineyards to smoke taint. We were thrilled to secure late in the piece a few tonnes of Sauvignon blanc from Dromana in the Mornington Peninsula the same site we had inherited from Unkel wines in 2018 (and we had previously used for our 18 Das Juice white).
Fruit was picked early, crushed and left on skins for three days. From here the juice was chilled down and underwent a slow temperature controlled wild ferment allowing the majority of the solids to separate. Once the wine was almost dry it was transferred to the bottle and underwent the remaining ferment in the bottle. No sulphur added and not disgorged. Notes of passionfruit and peach, drink cold.
