A blend of Savagnin & Pinot Gris from the Willow Grove vineyard (with a little Semillon & Sauvignon Blanc from the Warragul vineyard). Willow Grove is north-facing with own rooted vines grown organically without irrigation. All fruit was direct pressed into old French oak barrels for wild fermentation. Pinot Gris was occasionally topped up with excess wine, while Savagnin was left untopped for ageing in barrel. Focused and saline acid line of pomaceous fruit and green almonds, almost northern Italian, a perfect match with a seafood platter or a waxy cheese.
