Travis named this wine after Sebastien Riffault; a winemaker in Sancerre who works with botrytis affected Sauvignon Blanc berries to produce exceptional and unique wines. This wine is a blend of Sauvignon Blanc and Semillon. The SB is picked over the course of one month, at 4 different times. The first two picks are fermented together and the last two picks are fermented together. The Semillon is picked on the same day as the second pick of the SB and fermented with it.
The wine has such a delicate aroma, sweet ripe fruits, honeysuckle and fresh apricot. The palate has a viscous feel to it. Baking spices, ginger and honey. If you say you don't like Sauvignon Blanc, then you definitely haven't tried this, and you definitely should.
