Notes for the Boomtown wines have been provided by Tim.
Our second release under the Boomtown label, this year all raised on granite with Pinot Gris (85%) from Mount Alexander and Shiraz (15%) from Metcalfe Valley. The Gris pick was split between 2 pots; one fermented as whole bunch carbonic maceration and the other destemmed macerating on full skins. Both pots were pressed together after 5 days straight to puncheon to finish primary fermentation. The wine was racked off gross lees and bottled in July; unfiltered, unfined with minimal sulphur added. Pale and savoury and just right when it's hot out. Lifted aromatics and thirst quenching acidity; with plenty of texture.
