Iwo Jakimowicz & Sarah Morris are Si Vintners and their journey began in 2010 through a chance drive past an established vineyard in Rosa Glen, about 11km south-west of Margaret River in Western Australia. Their winemaking philosophy is very simple, they try to guide the wines in a way that they stay pure and expressive of the site and vintage. The wines are all fermented naturally with indigenous yeast, they are never filtered or fined and the only additions they receive is minimal sulphites at blending or bottling and only when required.
It's wild and aromatic on the nose with red berries, rose petals and herbaceous notes. The palate is textural and fresh with citrus fruits. Try this wine with light entrees such as Bruschetta, and firm cheeses.
