This is really unique wine and, in terms of the style of vinification, a first for Mon and Tim. Here you have pinot gris and sauvignon blanc macerated together as whole berries for six months in a terracota egg and the shape and structure of the wine is something totally unique and quite fascinating. Two parcels of sauvignon from quite different parts of the farm and the same fruit grown for the Blush make up this new cuvee. The tannin is mouth filling, super fine and chalky and hits the palate in the most unique of ways. The style of fruit is also very unique - there are flashes of various shades of colour on the palate and the whole is marked by a wonderful delicacy and restraint. I would serve this cool but not fridge cold....and I would certainly suggest allowing this to come up to temperature at the lunch or dinner table and enjoy it with a plate of something delicious.
