"A re-visiting of the 2020 Spring Wine releases, an interesting look at where I’m at and what has changed in a year since that release. Same vibes as the 2020 release but different vineyards and slightly different winemaking techniques. Hope you enjoy them!
All wines are unfiltered, unfined, wild ferment and no additions of any kind – just grapes!
80% Vermentino from Chalmer's Vineyard from Merbein, Vic. 25% whole bunch semi-carbonic fermentation in stainless. 21 days on skins, pressed to old oak on full solids, then blended with 30-day skin contact muscat (10%) and pinot gris (10%) which were fermented separately in stainless.
Vermentino salinity, muscat spice and jasmine, grip from the gris. More refreshing than intense."
