Destemmed and held on skins for a short 5 day maceration. No oak, all Flex Cube. Being a Portuguese grape, its got really bright vibes, with blueberries, raspberries, vanilla and sweet chocolate. Preferably should be chilled, but is great at ambient too.
We work with growers who practice organics and regenerative farming techniques. Our philosophy in the winery is one of a hands-off approach, therefore none of the cask wines have been fined or filtered, all wines have had very minimal SO2 added just prior to packaging, and everything is wild fermented.
