Picked and destemmed for skin contact for 6 hours prior to pressing to tank. Wild ferment, no filtration or fining. The wine throws plenty of juicy stone fruit and banana lolly, but with a clean line of acid for balance.
We work with growers who practice organics and regenerative farming techniques. Our philosophy in the winery is one of a hands-off approach, therefore none of the cask wines have been fined or filtered, all wines have had very minimal SO2 added just prior to packaging, and everything is wild fermented.
