Organic Chardonnay handpicked early once again to retain some natural acidity. Whole bunch direct pressed to a 7 year old french puncheon to ferment. Once it was pretty dry it was racked off gross lees and then returned to rest on fine lees.
Organic Pinot Noir was handpicked and de stemmed and macerated for a couple of days for some colour and flavour from the skins. Racked to a 7 year old french hogshead. Blended in spring and bottled with no additions.
Fresh strawberries with lemon twang. Fresh and wet with a touch of drying tannins on the finish.
