A wine made from organic and Biodynamic fruit hand harvested by Patrice consisting of 40% Grenache Blanc (Mont Vontoux) 40% Melon de B. (Loire) and 20% Pinot Gris (Alsace). 30% is direct pressed, 40% undergoes a 4 week maceration in acacia and 30% sits on skins for 6 months in old oak. Bottled with no filtration and no sulphites at any stage.
Straw, copper and satsuma plum, metal, clove and cardamom. It's a little like an iced tea spiked with ginger and spices. Even safron makes an appearance. The flow of tannin is spot on for the weight and acidity. I could see myself drinking this with an urchin sushi.
