THREE NATURAL CUVÉES TO DIVE INTO:
80% Vermentino 20% Moscato Giallo handpicked & grown by the Chalmers Family in Colbinabbin, Vic. Wild ferment. Unfined / unfiltered. Zero Adds / No Sulfur Added. 11.3% ABV.
100% Shiraz grown & handpicked in Redesdale, VIC. 60% de-stemmed and macerated for 10 days, basket pressed into old French Barriques and 40% whole bunch carbonic maceration for 10 days, stomped and pressed 4 days later into old French Barriques. 7 months élevage with a few days of gentle battonage incorporating healthy Vermentino Lees into half the barrels. No racking. Wild ferment. Unfined/unfiltered. Zero Adds / No sulphur added. 11.5% ABV.
35% Shiraz, 28% Merlot, 11% Cabernet Sauvignon, 24% Cabernet Franc grown & handpicked in Redesdale, VIC. 5 months élevage in Inox. Wild ferment. Unfined / unfiltered. Zero Adds / No sulphur added ever. 12% ABV.
